This January, as the new year gets underway and the Epiphany festivities begin, the king's cake takes pride of place on our tables. This tradition goes back centuries to ancient rituals celebrating the arrival of the Three Wise Men. Sharing the galette, with the hidden bean and the crown adorning the head of the king or queen, echoes a fascinating history of conviviality and sharing. As a passionate wine lover, I'm convinced that choosing the perfect companion for this golden delight will enhance your table.

The classic frangipane, rich in almonds and almond cream, calls for a wine that balances the density of flavours. But when Jean Imbert, accompanied by Romuald Bizart and Camille Lochouarn, came up with a galette for the Maison Dior patisserie, it was flavoured with lemon zest frangipane and honey from the House's beehives.

My choice was an Riesling Alsace. The liveliness of this white wine, combined with its subtle notes of peach and citrus, provides a gentle counterpoint to the unctuous texture of the galette.

Shangri-La Paris king's cake with hazelnut flavours and Roussillon wine

An irresistible treat, the galette from pastry chef Maxence Barbot offers a double dose of happiness with its double puff pastry croissant dough, home to addictive praline, gourmet caramel and caramelised hazelnut paste. To enhance them, I suggest a Maury from Roussillon. This naturally sweet wine offers aromas of dried fruit, caramel and chocolate, sure to enhance the delicacy of your galette.

Brioche cake with fruit and Burgundy Champagne

If your king's cake is a brioche version bursting with candied fruit, then a sparkling wine is in order. A good Burgundy Champagne will elegantly accompany the sweet nuances of the brioche while adding a touch of sophistication to your gourmet crown.

This year, the George V's king's cake takes on the air of an apple turnover. On the menu: croissant pastry puff pastry, apples, almond frangipane and tonka beans. For this masterpiece by Guillaume Cabrol, opt for a Gewurztraminer from Alsace. The floral and spicy notes of this dry white wine blend perfectly with the sweet and tart flavours of the apple, creating a harmony that will delight your guests' taste buds.
