Domaine Nicolas Rossignol
Nicolas Rossignol was born into a winemaking family in 1974. Today, he represents the 5th generation of Volnay’s vineyards. Graduate of a technical training course at Lycée Viticole of Beaune, he makes wine at his father’s domain, domain Rossignol-Jeanniard since 1994. Determined to learn more, he goes to South Africa to make wine at domain Boschendal in 1995. It was only in 1997 that he created his own domain in Beaune: domain Nicolas Rossignol. Representing 3 hectares in the beginning, the vineyard is split over the municipalities of Volnay, Pommard, Beaune, Aloxe-Corton and Pernand-Vergelesses. In 1998, the total surface of the domain Rossignol-Jeanniard and Nicolas Rossignol represented around 16 hectares. Over the years, additional hectares were added to the domain which covers 20 hectares today. In 2011, Nicolas took the decision to merge his domain with his father’s and keep the “Domaine Nicolas Rossignol” label.
Just like other winemakers in Burgundy, domain Nicolas Rossignol follows biodynamic practices. The last date of harvest, just like the work done at the vines and the making of the wine, is influenced by the lunar calendar. There are a lot of fruits in the wines of Pommard. Volnay possesses a good density along with a great finish. In 2016, the construction of a modern and sustainable wine cellar allows the process to continue after the work done at the vineyard. So, the domain Nicolas Rossignol can continue to create exceptional wines.
